Ceviche

Enjoy a Latin American take on Ceviche, perfect for an afternoon snack or dinner appetizer.

Ingredients
  

  • 1 lb Small white shrimp (cleaned and deveined) Fresh shrimp is the best.
  • 1 each Mango (diced)
  • 1 each Red onion (diced)
  • 1-2 each Jalapeños (diced and seeded)
  • 1 each Avocado (diced)
  • 1 cup Lemon juice
  • 2 each Fresh Limes
  • 3 tablespoons Cilantro leaves (shredded)
  • as needed Salt and pepper

Instructions
 

  • Clean and devein the shrimp, place in a bowl and cover in lemon juice. refrigerate, overnight
  • In another bowl, combine the prepared mango, onion, jalapeño, cilantro, and avocado.
  • Drain shrimp and add to the fruit bowl. Squeeze fresh lime, and season.
  • Place in a serving bowl, serve with corn chips. Enjoy!
