Equipment

  • Food processor
  • 3 qt Pot
  • Large bowl
  • Medium bowl
  • Mini muffin pan
  • Wire rack

Ingredients

  • 2 cups Dates pitted (about 40)
  • 3/4 cup Coconut water (enough to cover the dates)
  • 3 cups Flour
  • 1/2 cup Sugar
  • 1/2 cup Dark brown sugar
  • 3 Eggs
  • 3/4 cup Sunflower oil
  • 3 tsp Baking powder
  • 1 tsp Cinnamon
  • Powdered sugar

Instructions

  • In a food processor add the dates and process until smooth (approximately 2 minutes on high setting).
  • Place the dates and coconut water into a pot.
  • Cook on low for 5 minutes. This will plump (soften) the dates where they will blend into the muffin.
  • In a large bowl add the flour, sugar, baking powder, and cinnamon, make a well in the center.
  • In another bowl, add the dark brown sugar, eggs, and sunflower oil. Whisk this mixture until well blended.
  • Pour the egg mixture into the center open well in the larger bowl.
  • Then add the plumped dates and coconut water. Mix this mixture well.
  • Scoop into a mini muffin pan, sprayed with an oil to prevent sticking.
  • Place in the oven and bake 15 minutes at 350.
  • Remove muffins, cool on a wire rack, and sprinkle the top with powdered sugar. Enjoy!
