Beef Skewers with Bay Leaves
- 1 lb Tenderloin steak (cut 1 inch cubes)
- 1 cup Dried bay leaves
- 3 cloves Garlic (mashed)
- ½ teaspoon Salt
- as needed Olive oil
Red Pepper Sauce
- 3 Fresh red peppers
- 1 Slice of bread
- ½ cup Milk
- ½ cup Cilantro leaves
- ¼ teaspoon Nutmeg
- ½ teaspoon White pepper
- 2 cloves Garlic
- 1 teaspoon Salt
Beef Skewers with Bay Leaves
In a bowl, marinate the beef in salt and garlic cloves, at room temperature, for 1 hour
Using a metal skewer, thread a cube of beef then a bay leaf, keep alternating until skewer is full.
Brush the skewers with olive oil, grill to your preference.
Serve with the Red Pepper sauce
Red Pepper Sauce
Rinse the red peppers and place on a grill, char all sides of the pepper (place on a baking dish in the oven about 30 minutes, if you have no grill)
Place charred peppers in a bowl and cover with plastic wrap, let sit 20 minutes.
Peel and seed the peppers (do not rinse them)
Place in a blender or Vitamix.
In another bowl , place the bread and milk, let soak for 30 minutes.
Add the bread mixture and remaining ingredients to the peppers.
Blend until smooth, serve with the Beef Skewers. Enjoy!
